Curry Tuna Salad
Makes 2, 7-ounce servings
Preparation time: 10 minutes

1 can (5 ounces) tuna packed in water
1 large celery stalk, cut into fine dice
1 Tbs sweet pickle relish
2 Tbs raisins
2 Tbs nonfat yogurt
1/2 tsp curry powder
1/2 tsp lemon juice
Ground black pepper to taste
4 slices whole wheat bread
2 large lettuce leaves

Drain water off tuna and place in a small bowl. Add remaining ingredients and stir until well mixed. Cover and refrigerate until ready to serve. Spread on bread and top with lettuce leaves.

Nutrition information per serving: 270 calories, 3g fat, 1g saturated fat, 20mg cholesterol, 38g carbohydrate, 5g fiber, 630mg sodium, 25g protein.
